1 cup Italian-style breadcrumbs
2 large eggs

1/4 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)
2 tablespoons olive oil
Optional Additions
1/2 cup shredded mozzarella for a cheesy center
1/4 cup marinara sauce mixed into the meat
Chopped bell peppers or mushrooms for extra vegetables
A light marinara or tomato glaze brushed on top before baking
Tips for Success
Do not overmix the meat, as this can make the meatloaf dense
Use a mix with some fat to ensure a juicy texture
Let the meatloaf rest after baking to help it hold its shape
Finely chop onions and garlic so they blend evenly
Instructions
Preheat the oven to 375°F (190°C).
Lightly grease a loaf pan or baking dish.
In a large bowl, combine ground beef, onion, garlic, breadcrumbs, eggs, milk, Parmesan, parsley, oregano, basil, salt, pepper, and olive oil.
Mix gently until just combined.
Shape the mixture into a loaf and place it in the prepared pan.
If using, spread marinara sauce lightly over the top.
